De produkten gemaakt van het "zwarte varken" (jamón ibérico is de officiële benaming; pata negra, jabugo zijn de meer populaire aanduidingen) behoren tot de lekkerste in hun genre !

Het 'zwarte varken' loopt van jongsaf vrij rond op de boerderij en krijgt een aangepaste voeding tot het 80-90 kg weegt.  Daarna wordt het in open domeinen gezet waar het zich met eikels en gras voedt tot het ong. 18 maanden oud is en tussen 150 en 190 kg weegt.  Een volwassen dier eet gemakkelijk tussen de 6 en 8 kg eikels per dag !  Deze vrucht, afkomstig van steeneiken (encinar) en kurkeiken (alcornoque) vindt men voornamelijk in het Westen van Spanje tegen de grens met Portugal.

Na de slachting volgt de verwerking van de verschillende delen.  De hammen worden korte tijd op zout gelegd en daarna volgt de droogtijd (tot 36 maanden) in het daartoe geschikte klimaat van West-Spanje. Het resultaat is een reeks van prachtige produkten, gekenmerkt door hun fijne smaak.  De JAMÓN IBÉRICO is ook in Spanje een luxe-produkt, dat de laatste jaren een enorme opgang heeft gekend.  Laat u geen SERRANO voor een PATA NEGRA verkopen !  De PATA NEGRA heeft bijna altijd een zwarte hoef; de vetlaag is dikker en zacht (men kan er 'putjes' in duwen).  Het is o.a. deze vetlaag die de prachtige kwaliteit levert. In bepaalde stukken van het vlees ziet men de tyroxinekristallen afkomstig van de grote hoeveelheid eikels die het dier heeft gegeten.

LEKKER en GEZOND
In tegenstelling tot het vlees van het roze varken, is dat van het zwarte varken GEZOND omdat het voornamelijk ONVERZADIGDE VETZUREN bevat !  Het oliezuurgehalte is vergelijkbaar met dat van olijfolie. (Deze stelling werd meermaals bewezen door onafhankelijke studies)
